Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Heat the chicken stock and dashi. Mix soy sauce and mirin and add gradually, checking the salt.

  2. 2

Heat the chashu separately until hot throughout. Keep the eggs refrigerated until serving.

  3. 3

Cook the noodles in a separate pot according to the package; drain without leaving them to stand.

  4. 4

Divide broth and noodles between two bowls. Add chashu, halved eggs and scallions. Serve immediately.

Cooking tips

  • Cook the noodles last and serve immediately so they do not absorb too much broth.
