History

An Osaka street-food specialty whose name refers to cooking what you like on a griddle.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Mix flour, eggs and water. Fold in the cabbage without compressing it.

  2. 2

Heat oil in a skillet over medium heat. Form two thick pancakes and lay the pork belly on top.

  3. 3

Cook 5 minutes, turn with a wide spatula and cover. Cook 5-7 minutes more until the center is firm and the pork is cooked.

  4. 4

Turn again and check that no liquid batter remains. Top with sauce, mayonnaise, bonito flakes and aonori.

Cooking tips

  • Do not press the pancake with the spatula: steam helps cook the cabbage inside.
