Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Wrap each dried strawberry in 20 g of anko and set aside.

  2. 2

Mix rice flour, sugar and water in a heatproof bowl. Steam 15-20 minutes, stirring halfway, until shiny and translucent.

  3. 3

Carefully turn onto a starch-dusted surface and let cool enough to handle; the dough is very sticky.

  4. 4

Divide into six pieces, flatten and wrap around each strawberry. Seal, brush off excess starch and cool before eating.

Cooking tips

  • Hot mochi dough is sticky and can burn: let it cool enough before handling.
