Sauerbraten and Kasespatzle have different preparation schedules. The first includes refrigerated marinating and meat cooking; the second combines small dough pieces with cheese and onion. Check the sauerbraten's total time before scheduling a meal: waiting is part of preparation even when it is not active work.

For spatzle, prepare the cooking pot before shaping the dough and work in batches to avoid crowding. Drain before mixing with cheese. For sauerbraten, taste the sauce before correcting sweetness or acidity and keep utensils for raw meat separate from those used for cooked meat.
