History

Potato tortilla is made throughout Spain, with and without onion. Its origin is not assigned exclusively to Pamplona here.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Heat oil over medium-low heat. Cook potatoes and onion 20-25 minutes until tender without browning too much.

  2. 2

Drain and reserve the oil for other cooking. Beat eggs with salt and mix with the warm potatoes.

  3. 3

Heat 1 tablespoon of the oil in a 22 cm nonstick skillet. Add mixture and cook on low until the base is firm.

  4. 4

Turn using a plate covering the pan and slide back in. Cook until the center reaches 71 °C and no liquid egg remains.

  5. 5

    Rest 5 minutes before cutting.

Cooking tips

  • Use a plate wider than the skillet and dry oven mitts to turn carefully.
