Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Soak the bread in some of the water for 5 minutes.

  2. 2

Wash and chop tomatoes, cucumber and pepper. Blend with garlic, bread and vinegar.

  3. 3

Drizzle in oil while blending to emulsify. Add salt and water to make a light soup.

  4. 4

Strain if desired and refrigerate at least 1 hour. Stir before serving.

Cooking tips

  • Taste salt and vinegar after chilling because the soup’s flavor changes slightly.
