History

A culinary treasure of Tuxtla Gutierrez and of Chiapas in general. It is prepared in wood-fired ovens for festivities and served in tacos or on a plate with lettuce.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Grind the ancho chiles with vinegar, garlic, and spices.

  2. 2

Marinate the meat in the adobo and let it rest overnight.

  3. 3

Place the meat in a baking dish and add water to cover.

  4. 4

Bake covered at 170 °C for about 2 hours until the pork separates easily with a fork; uncover at the end if you want to brown it.

  5. 5

Baste the meat with its juices during cooking.

  6. 6

Serve with lettuce, onion, and tortillas.

Cooking tips

  • Marinate in the refrigerator and turn the meat once to distribute the seasoning.
