History
Originating on the Sinaloa coast, aguachile is a preparation of fresh shrimp 'cooked' in lime and chile. Unlike ceviche, it is served immediately to keep the seafood juicy; the green version with serrano and cilantro is the most widespread.
Ingredients
Preparation
- 1
For a cooked-shrimp version, boil the shrimp until firm and opaque; immediately cool in ice water and drain.
- 2
Blend lime juice, serrano, cilantro, salt and pepper into a green sauce.
- 3
Mix cold shrimp with sauce and add cucumber and red onion.
- 4
Serve immediately with tostadas and refrigerate leftovers. Lime adds acidity but does not replace cooking seafood.
Cooking tips
- Add lime shortly before serving to preserve the cucumber and onion texture.
