History

Originally from Sonora, Mexico (Hermosillo and Ciudad Obregón), it crossed the border and became an emblem of the street food of Tucson, Arizona, where by the late 2000s there were more than 200 stands selling it. Its hallmark is the bacon-wrapped sausage and the soft bolillo roll, loaded with toppings in the northwestern Mexican style.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Wrap each sausage in a strip of bacon in a spiral.

  2. 2

Griddle them, turning, until the bacon is crispy and golden.

  3. 3

Lightly warm the bolillo rolls and open them from the top.

  4. 4

Place the sausage and cover it with pinto beans, tomato, and onion.

  5. 5

Finish with mayonnaise, mustard, and jalapeño sauce; serve with a blistered güero chile.

Cooking tips

  • Turn sausages to brown the bacon all around and use hot, already cooked beans.

Technique and preparation

What to check during preparation

Wrap bacon without heavy overlap because a thick layer is harder to cook through. Rotate the hot dog to brown all sides and ensure bacon is fully cooked. Use ready-to-heat hot dogs and follow their label. Drain beans, retaining only enough moisture to prevent a dry filling. Open the roll without cutting through the base and add sauces at serving time.
