Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Pound garlic and chile in a mortar. Mix lime juice, fish sauce and sugar.

  2. 2

Add beans and tomatoes and gently press to release some juice without puréeing them.

  3. 3

Add papaya, alternating gentle pounding with spoon movements until coated.

  4. 4

Adjust the balance of salt, acidity and heat. Top with peanuts and serve immediately.

Cooking tips

  • Gently pound the papaya so it absorbs dressing while staying crisp.
