History

Neapolitan pizza arrived with Italian immigration; the first licensed pizzeria in the United States, Lombardi's, opened in Manhattan in 1905. Over time the New York style emerged: thin, elastic dough baked in a gas oven, sold by the slice at 'slice shops.' Folding the slice in half to eat it while walking is part of the ritual.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Dissolve the yeast and sugar in the water; mix with the flour, salt, and oil until you have a smooth dough.

  2. 2

Let it ferment, covered, at least 1 hour until doubled in volume (better overnight in the refrigerator).

  3. 3

Stretch the dough very thin on a hot tray or stone.

  4. 4

Season the crushed tomatoes with salt and oregano and spread them, leaving a border free.

  5. 5

Distribute the mozzarella and bake at the oven's maximum temperature until the edge is golden and crisp.

  6. 6

Cut into large slices, sprinkle with basil, and serve.

Cooking tips

  • The minimum first rise is included in preparation; an overnight rise adds to the total time.
