History
The discada makes use of an old plow disc as a concave griddle over the fire. It's a get-together dish in the north, where bacon, chorizo, beef, pork, and vegetables are added in layers. Chihuahua and its neighboring states share it as an outdoor party dish.
Ingredients
Preparation
- 1
On the hot disc, fry the bacon until it renders its fat.
- 2
Add the chorizo and then the pork; cook until browned.
- 3
Stir in the beef and sear the meat.
- 4
Add tomato, onion, and chile; pour in the beer and let it reduce.
- 5
Season and serve in flour tortilla tacos.
Cooking tips
- Brown meats in batches: crowding cools the griddle and makes them simmer in their juices.
Technique and preparation
What to check during preparation
Cut meats into similarly sized pieces and prepare vegetables before heating the pan. Work in batches; an overcrowded disc or skillet collects liquid and steams meat instead of browning it. Remove cooked food with clean utensils separate from those used for raw meat. Reduce excess juices before serving. Cook fresh chorizo thoroughly; surface browning alone does not establish that the center is cooked.
