History

Also called a 'Western omelette,' it is associated with Colorado and the Old West. One theory holds that it derives from the 'Denver sandwich,' an egg filling with ham and onion that stagecoach and railroad cooks made with ingredients that kept well on the journey. Over time the filling came to be served as an omelette.

Preparation

  1. 1

Sauté the ham, bell pepper, and onion in a little butter until tender; set aside.

  2. 2

Beat the eggs with salt and pepper.

  3. 3

Melt butter in a skillet and pour in the egg; cook over medium heat, moving the edges.

  4. 4

When the egg is nearly set, place the filling and cheese on one half.

  5. 5

Fold the omelette over the filling and serve it when the cheese starts to melt.

Cooking tips

  • Cook eggs over medium-low heat and finish with a set center at 71 °C.
