History
This dish is closely associated with Burgundy and the region's tradition of cooking meat in wine. Our home version uses cubed beef for a deeply flavored sauce with a shorter simmer.
Ingredients
Preparation
- 1
Pat the beef dry and brown it in batches with oil in a casserole; set aside.
- 2
Brown the bacon, pearl onions and carrots. Add garlic and flour and stir to coat the vegetables.
- 3
Pour in wine and stock, scraping the pan. Return the beef and add the bay leaf; cover and simmer gently until tender.
- 4
Sauté the mushrooms separately, add them to the stew and let the sauce thicken gently.
- 5
Discard the bay leaf, season with salt and pepper and serve hot.
Cooking tips
- Keep the simmer gentle rather than boiling hard to help the beef stay tender.
