Ingredients
Preparation
- 1
Soak saffron in a ladle of hot stock. Gently sauté the onion in 25 g butter and the marrow.
- 2
Add rice and stir 2 minutes. Add wine and let it reduce.
- 3
Add hot stock a ladle at a time, stirring often and adding more as it is absorbed.
- 4
Add saffron infusion halfway through. Cook rice 16-20 minutes until tender with a slightly firm center.
- 5
Turn off the heat and stir in remaining butter and Parmesan. Season and serve with a flowing consistency.
Cooking tips
- Keep stock hot and serve the rice fluid rather than compact.
