History

It was created around 1930 by brothers Pat and Harry Olivieri, owners of a hot dog stand in South Philadelphia, when they grilled beef with onion instead of sausages. The cheese came later; with the arrival of Cheez Whiz in the 1950s it became one of the classic options, along with provolone and American. Pat's King of Steaks is still on the corner of 9th and Wharton.

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Heat the griddle or skillet with a little oil and saute the onion (and the mushrooms or pepper if using) until browned.

  2. 2

Add the sliced beef and saute it while chopping it up with the spatula, seasoning with salt and pepper.

  3. 3

Gather the beef and onion together and place the cheese on top so it melts.

  4. 4

Split the roll open and use it to scoop up the mixture with the melted cheese.

  5. 5

    Serve right away.

Cooking tips

  • Chill the meat before slicing thinly and cook on a wide, hot surface.
