Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Mix flour, eggs, salt and water into a thick batter that falls slowly from a spoon. Rest 10 minutes.

  2. 2

Slowly brown onions in butter, stirring, about 20 minutes.

  3. 3

Press batter through a spätzle maker into boiling salted water. Cook in batches until floating, then 1 minute longer; lift out.

  4. 4

Layer hot noodles and cheese in a dish. Bake at 200 °C about 10 minutes until melted.

  5. 5

Top with browned onion, season with pepper and serve.

Cooking tips

  • The thick batter must pass through the utensil; add water a spoonful at a time.
