Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Grind the toasted chiles de árbol with the roasted tomato, garlic, and salt into a spicy salsa.

  2. 2

Slit the rolls open along one side and remove some of the crumb.

  3. 3

    Fill with the broken-up chicharrón.

  4. 4

Add pico de gallo and douse with the chile de árbol salsa.

  5. 5

Adjust with lime juice and salt and serve immediately.

Cooking tips

  • Fill the rolls just before serving so the pork crackling retains some texture.

Technique and preparation

What to check during preparation

Use a firm-crusted roll and cut a pocket without tearing the base. Make the salsa separately and let it cool before assembly. Pork crackling loses its crunch when wet, so add it last and spoon on salsa gradually. Drain pickled pork skin if using it so its liquid does not soak the bread. Serve freshly assembled; for transport, pack salsa and crackling separately.
