History

These cookie-empanadas originated in Villa de Seris, now part of Hermosillo, where families of bakers made them popular. Their name is linked to the region's cultural blending, and the classic piloncillo filling reflects the wheat-flour baking traditions of northern Mexico.

Ingredients

Adjust quantities

Only numeric quantities at the start of an ingredient are adjusted. Descriptive quantities, seasoning to taste and timings remain unchanged; check them when changing servings.

Preparation

  1. 1

Mix the flour with the salt and lard until you get a sandy texture.

  2. 2

Add the water little by little and knead into a soft dough; let it rest.

  3. 3

Form thin disks; place piloncillo on half of them and cover with another disk, sealing the edges.

  4. 4

Prick the surface with a fork so the steam can escape.

  5. 5

Bake at 180 °C for about 20 minutes until golden.

Cooking tips

  • Rest the dough 20 minutes before rolling and seal well to keep the piloncillo inside.
