History
It is associated with South Texas and especially San Antonio, where in the late 19th century the 'chili queens' sold the stew in the plazas. The Tex-Mex recipe blends the Mexican tradition of chiles with beef from Texas cattle; authentic 'chili con carne' does without beans and large amounts of tomato.
